Strawberry Yogurt Bark (Valentine's Day Edition)

If you're looking for an easy and "pretty healthy" Valentine's Day-style treat for yourself or a loved one, try this easy Strawberry Yogurt Bark! You can get creative with yogurt bark, but this version is topped with some heart shaped strawberries, white chocolate chips, granola and some tiny dollops of strawberry marmalade shaped into hearts (well, kind of).

I myself am a fan of home made gifts of love on Valentine's Day. A gift that may not cost any money but that was made with lots of love and thought.


Thankfully, as a mom, I get plenty of those on Valentine's Day, and it always melts my heart. So, if you're a new mom who's nursing a baby and you feel like Valentine's Day isn't the same this year, just wait until that little one grows up and starts gifting you those arts & crafts with misspelled words and stick figures on it. They're truly the best Valentine's gift!


So, surprise your loved ones with a homemade Valentine's treat of your own!


PS: Children under 1 years old should not eat honey (especially raw) due to risk of Botulism, so you may want to leave out the honey (and substitute some other toppings) if you're planning on giving this to a young child.




Strawberry Yogurt Bark (Valentine's Day Edition)


Ingredients

1 cups Plain Yogurt (Greek or Natural)

1 to 3 tbsp Honey (or Maple Syrup)

1 tsp Vanilla Extract

3 to 5 Strawberries

2 tbsps White Chocolate Chips

2 tbsps Granola

1 tsp Strawberry Marmalade



Directions:

  1. Add Yogurt, honey and vanilla extract to a bowl and mix well.

  2. Chop strawberries lengthwise and then into heart shapes.

  3. Line a baking sheet with parchment paper and spread yogurt mixture out to about 1/4 inch thickness.

  4. Top with strawberry hearts first.

  5. Then add a few tiny dollops of strawberry marmalade in between. Shape into hearts by gliding a chopstick through the middle of the dollop.

  6. Now top with the rest of the toppings such as white chocolate chips and granola.

  7. Pop in the freezer for about 45 minutes to an hour. Once frozen solid, take out and chop into pieces, about 2 x 2 inches in diameter. Enjoy right away or store in the freezer.
